Say goodbye to tiring and complicated weeknight dinners.
This chicken sausage sheet pan dinner has it all: minimal effort, high protein, and incredible easy to make.
In fact, it’s got over 36 grams of protein per serving and requires just a few everyday ingredients. And it’s smothered in a creamy, dreamy greek yogurt honey mustard so it’s absolutely delicious, too.
Try this easy recipe the next time you’re craving a satisfying dinner when you’re low on energy. You won’t be disappointed!
Why you’ll love it
One pan: Nothing is easier than a one-pan dinner with minimal clean up. Everything is roasted in one cooking tray for this recipe, so it’s super stress free.
High protein: Each serving of this chicken sausage sheet pan dinner has 36 grams of protein! That means you’ll stay full and satisfied for hours. And if you’re working on building muscle, this dinner can definitely help.
Customizable: You can swap anything in this recipe; use a different potato, a vegetable you like better, or even swap out chicken sausage for something plant-based.
Ingredients
You’ll need a handful of ingredients to make this simple chicken sausage tray bake, plus a few more for optional seasonings and sauce.
- Sweet potato: You could sub for any potato you like! Whatever you use, I recommend keeping the skin on for extra fiber.
- Brussels sprouts: You could sub for another vegetable(s), like broccoli, bell pepper, red onion, cauliflower, or snap peas. But I love Brussels sprouts for this because they go perfectly with the yogurt honey mustard dressing.
- Olive oil: Sub for any neutral oil, like vegetable oil, avocado oil, or canola oil. You could also use cooking spray for fewer calories.
- Salt, pepper, and optional seasonings: You can season with whatever you like, but I use a bit of garlic powder and chili powder. Paprika, onion powder, or even cayenne pepper would be great too.
- Smoked chicken sausages: The kind of sausages that are vacuum-sealed and already cooked! They can be tricky to find, so ask your grocery store if you need help. You can use any flavor sausage you enjoy, but I like this with spinach and feta flavor, or sweet Italian chicken sausages.
I’d recommend some kind of creamy sauce to drizzle over your tray bake! If you’re short on time, use a store-bought honey mustard dressing.
Or, make my yogurt honey mustard dressing using greek yogurt, dijon mustard, honey, salt, and garlic powder. It’s super easy!
Step-by-step instructions
Position your oven rack to the middle and pre-heat to 400 F. Line a sheet tray with parchment paper and set aside.
In a large mixing bowl, add sweet potato, brussels sprouts, olive oil, and seasonings. Toss until everything is evenly coated.
Transfer your seasoned brussels sprouts and potatoes to the lined sheet tray. Add sliced chicken sausage and ensure everything is evenly distributed.
Transfer to the oven and bake for 35-45 minutes or until vegetables are dark golden brown and cooked though. Flip your vegetables and sausages about halfway through.
While that’s cooking, assemble your yogurt honey mustard sauce. Add all ingredients to a small bowl and mix until smooth and combined. Set aside.
When everything is cooked, transfer to serving bowls. Drizzle with yogurt honey mustard sauce and enjoy!
Dietary restrictions
Vegetarian: Substitute chicken sausage for plant-based sausage.
Plant-based: Use a plant-based sausage and swap the yogurt honey mustard dressing for a plant-based or vegan dressing from the store.
Lactose-free: Use lactose-free greek yogurt in your honey mustard dressing.
Gluten-free: This recipe is naturally gluten-free! Just make sure you’re using certified gluten-free ingredients that are free from contamination.
How to store
To store, allow all the vegetables and sausage to completely cool.
Then, transfer it to food containers with fitted lids. Store the honey mustard dressing separately, and pour it over your sausage and vegetables before eating.
Chicken sausage sheet pan dinner will stay good in the fridge for up to three days.
How to re-heat
Re-heat your chicken sausage and vegetable tray bake in the microwave for 60-90 seconds, or until everything is heated through.
Or, re-heat in your air fryer for 3-4 minutes at 350 F, or until heated through.
Add your yogurt honey mustard dressing to your bowl after your chicken and veggies have been heated.

Frequently asked questions
Because the right portion of chicken sausage depends on you and your goals! Personally, I like to enjoy two chicken sausages for more protein. If you’d prefer to serve one per person, that is fine too.
Absolutely! Simply double or triple the recipe to make this for more people, or to prepare a larger amount for meal prep. You may find you need to use two sheet pans to accommodate all your vegetables and chicken sausage.
Yes! If possible, try to find a yogurt-based honey mustard like the one from Bolthouse Farms.

Looks so good! Where do you get your chicken sausage? I find it tricky to find a clean/low fat option in Toronto
It is tricky to find! I can usually get it at Sobey’s, Fortinos, or Costco, but I’m not picky with brands since there aren’t many options! I’ve bought Marcangelo and Gourmet brands, and enjoyed both!
Another amazing recipe!!! And quick and easy to make! My husband really enjoyed it as well. I added a balsamic glaze on top of mine but he ate it without the glaze. I’ll have to try the sauce in this recipe next time!! Just didn’t have the ingredients.
I made this last night and was thoroughly impressed!! I’m not a sweet potato fan so I was a little scared I wasn’t gonna be into it but oh how wrong I was. Then the honey mustard sauce drizzle just amped the flavors. Thanks for a great recipe!
So glad you liked it! Thanks, Wendy!
I made it with chicken thighs. The drizzle/dressing is SO GOOD. I have made the dressing twice since then just to put on everything 🤓
Ooooh love the idea of using chicken thighs! What seasonings did you use on those? Delish!
This is the best sheet pan dinner ever! Super easy with minimal chopping, it is perfect for meal prep or easily assembling during the busy week. The yogurt honey mustard is the most delicious sauce I have made, and it elevates an already great meal. I am so happy with this easy to follow recipe!!
I’m so glad you liked it! Thank you so much for the review!
One of my new favorites. I love the sauce. I switch up the veggies based on what I have. It’s an easy and comforting week night meal!
What is the serving size in terms of grams or oz?
Thanks!
Absolutely delicious!
