Ingredients

You’ll need a handful of ingredients to make this simple chicken sausage tray bake, plus a few more for optional seasonings and sauce.

  • Sweet potato: You could sub for any potato you like! Whatever you use, I recommend keeping the skin on for extra fiber.
  • Brussels sprouts: You could sub for another vegetable(s), like broccoli, bell pepper, red onion, cauliflower, or snap peas. But I love Brussels sprouts for this because they go perfectly with the yogurt honey mustard dressing.
  • Olive oil: Sub for any neutral oil, like vegetable oil, avocado oil, or canola oil. You could also use cooking spray for fewer calories.
  • Salt, pepper, and optional seasonings: You can season with whatever you like, but I use a bit of garlic powder and chili powder. Paprika, onion powder, or even cayenne pepper would be great too.
  • Smoked chicken sausages: The kind of sausages that are vacuum-sealed and already cooked! They can be tricky to find, so ask your grocery store if you need help. You can use any flavor sausage you enjoy, but I like this with spinach and feta flavor, or sweet Italian chicken sausages.

I’d recommend some kind of creamy sauce to drizzle over your tray bake! If you’re short on time, use a store-bought honey mustard dressing.

Or, make my yogurt honey mustard dressing using greek yogurt, dijon mustard, honey, salt, and garlic powder. It’s super easy!

Step-by-step instructions

Position your oven rack to the middle and pre-heat to 400 F. Line a sheet tray with parchment paper and set aside.

In a large mixing bowl, add sweet potato, brussels sprouts, olive oil, and seasonings. Toss until everything is evenly coated.

Transfer your seasoned brussels sprouts and potatoes to the lined sheet tray. Add sliced chicken sausage and ensure everything is evenly distributed.

Transfer to the oven and bake for 35-45 minutes or until vegetables are dark golden brown and cooked though. Flip your vegetables and sausages about halfway through.

While that’s cooking, assemble your yogurt honey mustard sauce. Add all ingredients to a small bowl and mix until smooth and combined. Set aside.

Vegetarian: Substitute chicken sausage for plant-based sausage.

Plant-based: Use a plant-based sausage and swap the yogurt honey mustard dressing for a plant-based or vegan dressing from the store.

Lactose-free: Use lactose-free greek yogurt in your honey mustard dressing.

Gluten-free: This recipe is naturally gluten-free! Just make sure you’re using certified gluten-free ingredients that are free from contamination.

How to store

To store, allow all the vegetables and sausage to completely cool.

Then, transfer it to food containers with fitted lids. Store the honey mustard dressing separately, and pour it over your sausage and vegetables before eating.

How to re-heat

Re-heat your chicken sausage and vegetable tray bake in the microwave for 60-90 seconds, or until everything is heated through.

Or, re-heat in your air fryer for 3-4 minutes at 350 F, or until heated through.

Add your yogurt honey mustard dressing to your bowl after your chicken and veggies have been heated.

  • 1 medium sweet potato with skin on, cut into 1/2-inch cubes
  • 3 cups Brussels sprouts, halved
  • 1 Tbsp olive oil, or cooking spray
  • salt and pepper, a generous amount, to taste
  • 1/2 tsp each garlic powder and chili powder, optional
  • 2-4 *smoked chicken sausages (any flavor, I used spinach and feta), cut into 1/2 inch coins

Optional yogurt honey mustard sauce

  • 1/4 cup plain greek yogurt
  • 2 Tbsp dijon mustard
  • 1-2 Tbsp honey
  • 1/4 tsp fine sea salt or table salt
  • 1/2 tsp garlic powder
