Line a loaf pan with parchment paper and set aside. Add your peanut butter to a medium mixing bowl, and set aside.
In a microwave-safe bowl, microwave white chocolate chips until just melted. Warm in 15-second intervals, stirring well in between. Be careful not to over-heat your chocolate chips.
Pour white chocolate into the mixing bowl with peanut butter, and stir until combined and smooth.
Transfer to the lined loaf pan. Using the back of a spoon or spatula, smooth the top and distribute the mixture throughout the pan. Add flakey sea salt on top if desired.
Transfer to the fridge and cool for a minimum of 2 hours. Once it's cooled and completely set, transfer to a cutting board and slice into 16 squares. Store in a food container with a fitted lid in the fridge.
