Copycat Starbucks Egg White Bites

Servings: 12 egg bites
- 2 cups egg whites
- 1 cup cottage cheese I use 2%
- 1 cup shredded monterey jack cheese
- ¼ tsp salt
- 1 ½ Tbsp corn starch
- ½ Tbsp hot sauce I use Frank's red hot
- ¼ cup small diced roasted red peppers patted dry
- 3 green onions sliced thin
Position oven rack to the middle and pre-heat to 350 F. Prepare a muffin pan with liners and set aside.
Add egg whites, cottage cheese, shredded cheese, salt, corn starch, and hot sauce to your blender. Blend until smooth.
Pour into lined muffin pan, filling each almost to the top.
Top each egg bite with roasted peppers and green onion. Gently press the toppings down into the egg bites, and stir them with a fork to incorporate throughout.
Bake for 25-30 minutes or until the egg bites look puffy and set. Leave them to cool in pan until they reach room temperature. You'll notice they'll deflate and get smaller -- that's normal! Enjoy them warm, or wait for them to cool before storing.
- Make sure to use a silicone muffin pan or silicone liners because the egg white bites will stick to metal or paper.
- Feel free to add more mix-ins to your egg white bites, but limit to 1/2 cup or less. If you use too many mix-ins, you may end up with soggy egg bites.
