Cottage Cheese Chicken Salad

A protein-packed twist on classic chicken salad. This creamy cottage cheese chicken salad is mayo-free, super satisfying, and perfect for meal prep.

Ingredients
 

Cottage Cheese Dressing

  • 1 heaping cup low fat cottage cheese, I use 2%
  • 2 Tbsp Dijon mustard
  • ½ lemon, juiced
  • ¼ cup diced chives, and/or dill, parsley, or other fresh herbs
  • 1 Tbsp honey
  • ½ tsp salt
  • black pepper, to taste

Chicken Salad Base

  • 3 cups finely chopped rotisserie chicken, skin and bones removed, about 1 small rotisserie chicken
  • 2 ribs celery, diced small
  • 1 honeycrisp apple, diced small
  • 3 green onions, sliced thin
  • ½ cup chopped pecans

  • To your small blender cup, add cottage cheese. Blend until completely smooth, shaking the blender as needed, about 40-seconds.
  • Transfer blended cottage cheese to a small mixing bowl. Add remaining ingredients for the cottage cheese dressing. Whisk until completely smooth and combined, and set aside.
  • To your large mixing bowl, add rotisserie chicken, celery, apple, onion, and pecans.
  • Pour cottage cheese dressing over top. Mix until combined. Taste, and adjust salt and pepper as desired.
  • Enjoy in sandwiches, wraps, or as a dip with crackers and vegetables!
