Position your oven rack to the middle and pre-heat to 350 F.
Prepare a muffin tray with liners. Set aside.
In a medium bowl, whisk together Kodiak Cakes mix, cinnamon, baking powder, and salt. Set aside.
In a large mixing bowl, add the remaining ingredients. Whisk until well combined and smooth.
Add dry ingredients to wet ingredients. Stir until just combined.
Scoop muffin batter into liners, filling each about 3/4 full. Make sure you've used all your batter.
Bake for 18-25 minutes or until muffins are cooked through. You'll know they're done when they're lightly golden in color, and a toothpick comes out of the center clean with just a few moist crumbs.
Rest muffins in the pan for 10-minutes before transferring to a wire rack to cool. Store for later or enjoy!
