Kodiak Cakes Muffins (No Banana)

Ingredients

  • 2 cups Kodiak Power Cakes Flapjack and Waffle Mix Buttermilk flavor
  • 1 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup melted unsalted butter cooled
  • 1 cup unsweetened apple sauce
  • 1/2 cup milk
  • 1/3 cup honey
  • 1 large egg
  • 2 tsp vanilla extract

Instructions

  • Position your oven rack to the middle and pre-heat to 350 F.
  • Prepare a muffin tray with liners. Set aside.
  • In a medium bowl, whisk together Kodiak Cakes mix, cinnamon, baking powder, and salt. Set aside.
  • In a large mixing bowl, add the remaining ingredients. Whisk until well combined and smooth.
  • Add dry ingredients to wet ingredients. Stir until just combined.
  • Scoop muffin batter into liners, filling each about 3/4 full. Make sure you've used all your batter.
  • Bake for 18-25 minutes or until muffins are cooked through. You'll know they're done when they're lightly golden in color, and a toothpick comes out of the center clean with just a few moist crumbs.
  • Rest muffins in the pan for 10-minutes before transferring to a wire rack to cool. Store for later or enjoy!
