Tunacado Sandwich Recipe (Joe & the Juice Copycat)

A healthy lunch with 47 grams of protein. This copycat Joe & the Juice Tunacado Sandwich recipe is incredibly delicious and super filling.

Ingredients
 

Tuna "Mousse"

  • 1 can flaked or chunk tuna packed in water, drained
  • 2 Tbsp red onion, finely diced
  • 2 tsp drained capers
  • 1 Tbsp fresh dill, finely chopped
  • 1 Tbsp dijon mustard
  • 3-4 Tbsp plain greek yogurt
  • 1 Tbsp lemon juice
  • salt and pepper, to taste

To Assemble

  • 2 slices whole wheat bread, toasted
  • 1/4 avocado mashed
  • 1-2 Tbsp pesto
  • 1-2 slices tomato
  • salt and pepper

Instructions
 

  • Toast bread: Toast your bread and set aside.
  • Prepare tuna mousse: In a small bowl, add drained tuna, red onion, capers, dill, mustard, greek yogurt, lemon juice, salt, and pepper. Mix very well with a fork until you have an almost smooth tuna salad. If desired, you could prepare this in a food processor instead (but I prefer a bit of texture remaining).
  • Assemble sandwich: Spread pesto on one slice of bread. On the other slice, spread mashed avocado. Add tomato slices, and season with salt and pepper. Top with tuna, close your sandwich, and slice as desired.
