Apple Pie Overnight Oats

Dessert for breakfast, with a surprising amount of protein! Enjoy these perfectly sweet apple pie overnight oats for your next filling meal prep breakfast.

Ingredients

Apple Pie Topping

Overnight Oats

  • 1 cup large flake oats
  • 2 scoop vanilla protein powder I use Leanfit vanilla whey
  • 2 Tbsp ground flaxseed
  • pinch salt
  • dash cinnamon
  • cup plain Greek yogurt
  • 1 cup milk

To Serve (Optional)

  • 2 Tbsp crushed pecans

Instructions

  • Make apple pie topping: To your pot, add all ingredients for the apple pie topping, and stir. Turn the heat to medium. Cook for 8-10 minutes, stirring occasionally, or until apples are softened and lightly browned. Remove from the heat and set aside.
  • Prepare oats: Divide the ingredients for the overnight oats between two food containers or glass jars. (Each container will get: ½ cup oats, 1 scoop protein powder, 1 Tbsp ground flaxseed, pinch of salt, dash of cinnamon, ½ cup milk, ⅓ cup greek yogurt.) Stir until the mixture is clump-free.
  • Top with apples: Make sure your apple pie topping has cooled to room temperature. Top each container/jar with half the apple pie topping.
  • Chill: Cover and refrigerate overnight. When you’re ready to eat, add crushed pecans (about 1 Tbsp per jar), and enjoy!

Notes

  • This recipe makes two jars of overnight oats.
  • I like honeycrisp apples because they’re super sweet, but you can swap for any variety you like.
  • I recommend leaving the skin on your apple for extra fiber.
