  • Honeycrisp apples: These are my favorite apples because they’re so sweet and flavorful, but you can swap with any variety you prefer. Leave the skin on for extra fiber. If you love apples, you’ll also enjoy my apple cinnamon oat muffins or easy apple nachos.
  • Rolled oats: I prefer rolled oats (also known as large flake oats or old fashioned), but quick oats work too. Steel cut and instant oats won’t work in this recipe.
  • Vanilla protein powder: Use a protein powder you enjoy, because you’ll be able to taste it! Don’t swap for unflavored protein powder, or your oats will lack sweetness.
  • Milk: Any milk or plant-based alternative like almond milk or soy milk works.
  • Greek yogurt: Low fat greek yogurt adds protein and a creamy texture to the overnight oats base.
  • Ground flaxseed: You can skip this if needed, but I love the nutty flavor it adds.

How To Make Apple Pie Overnight Oats

Step 1: Cook apple pie topping until apples are soft, and let it cool.

Tips From My Test Kitchen

  • Use a good protein powder, and make sure it’s flavored. The flavor of your protein powder is important for this recipe. I like the Leanfit vanilla whey protein powder from Costco, but you can use any kind you have and enjoy.
  • Adjust liquid as needed. If you’re using extra thick greek yogurt, your overnight oats will be extra thick too. Add an extra splash of milk if needed to thin your oats.
  • Give it time to thicken. Overnight oats need at least 4 hours in the fridge to set-up, but they’re best when set overnight. Make these apple pie overnight oats at least one night in advance.

Common Questions

Do I have to use honeycrisp apples?

Nope! You can use any variety of apple you prefer. I recommend leaving the skin on your apples for the most fiber.

Can I use steel cut oats instead?

Unfortunately, steel cut oats don’t work well in overnight oats. I recommend sticking with old fashioned/rolled oats, or swapping for quick oats if needed.

What if my oats are too thick?

If you use an extra thick greek yogurt, you might end up with thick overnight oats. Stir in a splash of milk before eating if needed to thin.

Apple Pie Overnight Oats

Ingredients 

Apple Pie Topping

  • 1 large honeycrisp apple, diced small
  • 1 Tbsp salted butter
  • 1 ½ Tbsp brown sugar, packed
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • pinch salt

Overnight Oats

  • 1 cup large flake oats
  • 2 scoop vanilla protein powder, I use Leanfit vanilla whey
  • 2 Tbsp ground flaxseed
  • pinch salt
  • dash cinnamon
  • cup plain Greek yogurt
  • 1 cup milk

To Serve (Optional)

  • 2 Tbsp crushed pecans

Instructions 

  • Make apple pie topping: To your pot, add all ingredients for the apple pie topping, and stir. Turn the heat to medium. Cook for 8-10 minutes, stirring occasionally, or until apples are softened and lightly browned. Remove from the heat and set aside.
  • Prepare oats: Divide the ingredients for the overnight oats between two food containers or glass jars. (Each container will get: ½ cup oats, 1 scoop protein powder, 1 Tbsp ground flaxseed, pinch of salt, dash of cinnamon, ½ cup milk, ⅓ cup greek yogurt.) Stir until the mixture is clump-free.
  • Top with apples: Make sure your apple pie topping has cooled to room temperature. Top each container/jar with half the apple pie topping.
  • Chill: Cover and refrigerate overnight. When you’re ready to eat, add crushed pecans (about 1 Tbsp per jar), and enjoy!

  • This recipe makes two jars of overnight oats.
  • I like honeycrisp apples because they’re super sweet, but you can swap for any variety you like.
  • I recommend leaving the skin on your apple for extra fiber.
