Banana Peanut Butter Oat Bars

  • Position oven rack to the middle and pre-heat to 350 F.
  • Prepare an 8x8-inch baking pan with parchment paper and set aside.
  • To a large bowl, add banana, peanut butter, honey, ground flaxseed, oats, baking powder, cinnamon, vanilla extract, and salt. Stir until well combined.
  • Pour batter into prepared baking pan and spread to reach the edges.
  • Sprinkle with an even layer of mini chocolate chips.
  • Bake for 18-23 minutes or until the top is set and lightly golden and a toothpick inserted into the center comes out mostly clean.
  • When your bars are warm out of the oven, finish with a sprinkle of flakey sea salt. Let them cool in the pan for 15-minutes before transferring to a wire rack. Let them cool to room temperature before slicing.
