Ingredients
- Mashed bananas — make sure your bananas are very brown and spotty for the best texture and flavor
- Natural peanut butter — look for unsalted natural peanut butter with only peanuts on the ingredients list
- Honey — you can substitute honey or agave if desired
- Ground flaxseed
- Quick oats — do not use instant or old fashioned oats

- Baking powder
- Cinnamon
- Vanilla extract — vanilla paste works too
- Salt
- Mini chocolate chips — mini distribute much better on the banana peanut butter oat bars, but you could use regular-size if needed
- Flakey sea salt — I don’t recommend skipping this!
How to make banana peanut butter oat bars
Position oven rack to the middle and pre-heat to 350 F. Prepare an 8×8-inch baking pan with parchment paper and set aside.

To a large bowl, add banana, peanut butter, honey, ground flaxseed, oats, baking powder, cinnamon, vanilla extract, and salt. Stir until well combined.

Pour batter into prepared baking pan and spread to reach the edges. Sprinkle with an even layer of mini chocolate chips.

Bake for 18-23 minutes or until the top is set and lightly golden and a toothpick inserted into the center comes out mostly clean.
When your bars are warm out of the oven, finish with a sprinkle of flakey sea salt. Let them cool in the pan for 15-minutes before transferring to a wire rack. Let them cool to room temperature before slicing.

How to store
Counter: If you plan to eat your banana peanut butter oat bars within three days, store them in a covered container on the counter. If desired, gently warm in the microwave for 15-20 seconds before serving.
Fridge: If you want your bars to last all week, store them in a covered food container in the fridge.
Freezer: Peanut butter banana oatmeal bars can be stored in a freezer-safe bag or container in the freezer for up to three months. Defrost in the fridge overnight, and re-heat in the microwave before serving if desired.
Top tips for success
- Wait until your bananas are very brown and spotty or your bars may be dry
- Use mini chocolate chips instead of regular for the best distribution
- Don’t skip the flakey sea salt — this makes the bars 10x better!

Common questions
The type of oats you use can impact the texture and moisture of the banana peanut butter oat bars. I would not recommend substituting quick oats in this recipe.
You don’t have to, but I recommend it! Mini chocolate chips make for a nicer mouth-feel and give the illusion of more chocolate per bite. But if you only have regular chocolate chips, they’ll work fine!
If the bars were dry, it’s most likely that your bananas were not ripe enough. Also, make sure you use a fresh and runny peanut butter, and don’t over-measure your oats.
