Cheesecake Stuffed Dates

Craving a candy bar but want something more nutrient-dense? Make these chewy and chocolatey cheesecake stuffed dates for an easy treat you can keep in the fridge.

  • 8 medjool dates
  • ¼ cup cream cheese
  • 3-4 Tbsp chocolate chips
  • 1-2 tbsp chopped pecans and/or graham cracker crumbs
  • Flakey salt

Instructions

  • Prepare tray: Line a plate or baking tray with parchment paper.
  • Prepare dates: For each date, make a lengthwise slice along one side, but don’t cut all the way through. Open the date and remove the pit. Place it on your parchment-lined plate, open side facing up. Repeat for all dates.
  • Add cream cheese: Spread about ½ Tbsp cream cheese in the centre of each date. Repeat for all dates, and return them to the parchment-lined plate.
  • Drizzle with chocolate: Arrange dates close together on a parchment-lined plate. To your microwave-safe bowl, add chocolate chips. Microwave in 15 second intervals, stirring in between, until chocolate chips are just melted and smooth. Drizzle melted chocolate over dates.
  • Add toppings: Immediately top with pecans and/or graham cracker crumbs and flakey salt.
  • Chill: Refrigerate for 20-minutes or longer so the chocolate hardens. Keep stored in the fridge. Enjoy!

Notes

  • If desired, add 1/2 teaspoon coconut oil to your chocolate chips to thin.
