Ingredient Notes

  • Medjool dates: This variety is larger and sweeter than others, and work best for stuffed dates. Don’t swap them!
  • Chocolate chips: If needed, melt your chocolate with 1/2 teaspoon of coconut oil to thin and make it easier to drizzle. You can use milk, semi-sweet, or dark chocolate — your choice.
  • Flakey salt: I keep a big box of Maldon flakey salt in the cupboards for desserts like this.
  • Cream cheese: We’re swapping the usual nut butter in stuffed dates for cream cheese, for more of a cheesecake flavor and a nice sweet-and-savory balance. You can use any cream cheese you have, including plant-based or whipped cream cheese.
  • Toppings: You can top these with any crushed nuts or cookie crumbs, but I like a mix of graham cracker crumbs and chopped pecans best.

Tips From My Test Kitchen

  1. Use medjool dates. This variety is larger and sweeter than others, and ideal for stuffed dates.
  2. Soften cream cheese. It will be much easier to spread at room temperature.
  3. Play with toppings. The sky is the limit, so play around with a combination you enjoy. Crushed pretzels, Oreo crumbs, or even salted peanuts would be delicious on these cream cheese stuffed dates.

Cheesecake Stuffed Dates

Ingredients 

  • 8 medjool dates
  • ¼ cup cream cheese
  • 3-4 Tbsp chocolate chips
  • 1-2 tbsp chopped pecans and/or graham cracker crumbs
  • Flakey salt

Instructions 

  • Prepare tray: Line a plate or baking tray with parchment paper.
  • Prepare dates: For each date, make a lengthwise slice along one side, but don’t cut all the way through. Open the date and remove the pit. Place it on your parchment-lined plate, open side facing up. Repeat for all dates.
  • Add cream cheese: Spread about ½ Tbsp cream cheese in the centre of each date. Repeat for all dates, and return them to the parchment-lined plate.
  • Drizzle with chocolate: Arrange dates close together on a parchment-lined plate. To your microwave-safe bowl, add chocolate chips. Microwave in 15 second intervals, stirring in between, until chocolate chips are just melted and smooth. Drizzle melted chocolate over dates.
  • Add toppings: Immediately top with pecans and/or graham cracker crumbs and flakey salt.
  • Chill: Refrigerate for 20-minutes or longer so the chocolate hardens. Keep stored in the fridge. Enjoy!

Notes

  • If desired, add 1/2 teaspoon coconut oil to your chocolate chips to thin.
