Ingredients

Instructions

  • Add all ingredients to a large mixing bowl.
  • Using a gloved hand, mix until spices are evenly distributed.
  • Form the mixture into 10 evenly-sized balls and press into 1/4-inch patties. You may wish to lightly grease your gloves to prevent sticking.
  • Coat a large non-stick skillet with cooking spray or a thin layer of oil, and heat to medium. Add your patties to the skillet. Gently press them down into the pan with the back of a greased spatula to keep them flat.
  • Cook your patties in batches for 3-4 minutes on each side, or until golden brown. Finish your patties with 1-2 minutes of covered cooking until the edges are no longer pink. The internal temperature will read 165 F when they're done.

Notes

  • The raw meat in this recipe is very sticky. Use cooking spray on your gloved hand and/or cooking spatula to prevent sticking.
  • The sausages can get tough if you make them too thick. Make thin patties and press them into the pan if needed to keep them flat.
  • Don't over-cook your chicken sausage patties or they may be tough.
