Key ingredients

  • Ground chicken — I prefer lean ground chicken in my breakfast sausage because it’s high in protein, low in fat, and super juicy and delicious. You could substitute lean ground turkey or lean ground pork, or use a mixture of the two.
  • Spices — I use a mixture of salt, pepper, garlic powder, onion powder, poultry seasoning, and cayenne pepper. If you can’t find poultry seasoning, you can leave it out. If you’d prefer a different spice blend, feel free to play around and use your own.
  • Maple syrup — Pure maple syrup gives these maple breakfast sausage patties a delicious, lightly sweet flavor. You can swap for honey or any liquid sweetener of choice.
  • Olive oil — A little bit of oil helps moisten the chicken sausage patties and make them extra satisfying. You could also use avocado oil or canola oil.

How to make homemade chicken sausage patties

Add all ingredients to a large mixing bowl. Using a gloved hand, mix until spices are evenly distributed.

Form the mixture into 10 evenly-sized balls and press into 1/4-inch patties. You may wish to lightly grease your gloves to prevent sticking.

Coat a large non-stick skillet with cooking spray or a thin layer of oil, and heat to medium. Add your patties to the skillet. Gently press them down into the pan with the back of a greased spatula to keep them flat.

Cook your patties, uncovered, for 3-4 minutes on each side, or until golden brown. Finish your patties with 1-2 minutes of covered cooking until the edges are no longer pink. The internal temperature will read 165 F when they’re done.

How to serve maple chicken breakfast sausages

These maple chicken sausage patties make a great high-protein snack. For a more filling snack or meal, serve with carbs, fiber, and/or healthy fats:

  • Add to an egg breakfast sandwich on a whole grain english muffin
  • Serve with eggs, whole grain toast, and berries

Storage and re-heating

Fridge: Store in a closed food container or sealed bag in the fridge for up to three days.

Freezer: Store in a freezer-safe food container or bag in the freezer for up to three months. Defrost in the fridge overnight before re-heating.

Re-heat: In the air fryer, re-heat for 5-minutes at 325 F. In the microwave, reheat in a moistened paper towel for 30-45 seconds or until heated through.

Important tips for success

  • The raw meat in this recipe is very sticky. Use cooking spray on your gloved hand and/or cooking spatula to prevent sticking.
  • The sausages can get tough if you make them too thick. Make thin patties and press them into the pan if needed to keep them flat.
  • Your maple chicken sausage patties can get tough if over-cooked. Use a meat thermometer and take them off the heat at 165 F to prevent this.
