Position your oven rack to the middle and pre-heat to 425 F. Line a large sheet pan with parchment paper and set aside (see notes for air fryer instructions).
To a medium mixing bowl, add salmon, olive oil, garlic powder, onion powder, salt, and pepper. Toss to coat.
Spread salmon bites evenly over the parchment-lined pan. Make sure they're spread out with no overlap.
Bake for 8-12 minutes or until salmon is cooked to your liking. Finish under the broiler for 1-3 minutes for some extra crisp, but watch them closely to prevent burning.
When your salmon is done cooking, prepare your hot honey. Add honey, hot sauce, and butter to a small sauce pan over medium-low heat. Stirring occasionally, heat this mixture until the butter is melted and everything is combined. Taste, and adjust ingredients as needed.
Pour hot honey over the salmon and gently toss with tongs. Finish with a squeeze of lime juice.
Serve your salmon bites with rice, shelled edamame, green onions, and/or other toppings as desired. Spoon extra hot honey from the pan over your plate. Enjoy!
Air fryer instructions: Pre-heat your air fryer to 400 F according to manufacturer's directions. Bake your salmon for 8-10 minutes or until cooked through and lightly golden. Make sure not to over-crowd the air fryer. Once the salmon is cooked, transfer your salmon bites to a large mixing bowl to toss with hot honey.
