Ranch Chicken Salad

Yield: 6 servings
Prep Time: 20 minutes
Total Time: 20 minutes
Chicken, bacon, and ranch – but make it healthy and high-protein! Make this easy ranch chicken salad for a satisfying meal prep lunch.

Ingredients

  • 1 small rotisserie chicken, skin and bones removed, and diced small
  • 3 slices cooked turkey bacon, diced small
  • cup plain low-fat Greek yogurt
  • cup mayonnaise
  • 2 Tbsp dijon mustard
  • 2 ribs celery, diced small
  • 1 medium dill pickle, diced small
  • 5 green onions, sliced thin
  • ½ lemon, juiced
  • 1 packet (28-grams) ranch seasoning powder, I use Hidden Valley

Equipment

Instructions

  • Add all ingredients for ranch chicken salad to a large mixing bowl.
  • Mix until well combined and taste. Rotisserie chickens can vary in size – so add more yogurt, mayonnaise, and/or lemon juice as desired.
  • Serve immediately, or chill for at least two hours for best results. Enjoy!

Notes

  • Feel free to substitute turkey bacon for regular pork bacon.
  • You can use all mayonnaise, all Greek yogurt, or any combination of the two. Just make sure the total amount equals about 1 cup.
  • The brand of ranch seasoning matters – I recommend Hidden Valley if you can find it.
