Ranch Chicken Salad

- 1 small rotisserie chicken skin and bones removed, and diced small
- 3 slices cooked turkey bacon diced small
- ⅔ cup plain low-fat Greek yogurt
- ⅓ cup mayonnaise
- 2 Tbsp dijon mustard
- 2 ribs celery diced small
- 1 medium dill pickle diced small
- 5 green onions sliced thin
- ½ lemon juiced
- 1 packet (28-grams) ranch seasoning powder I use Hidden Valley
Add all ingredients for ranch chicken salad to a large mixing bowl.
Mix until well combined and taste. Rotisserie chickens can vary in size – so add more yogurt, mayonnaise, and/or lemon juice as desired.
Serve immediately, or chill for at least two hours for best results. Enjoy!
- Feel free to substitute turkey bacon for regular pork bacon.
- You can use all mayonnaise, all Greek yogurt, or any combination of the two. Just make sure the total amount equals about 1 cup.
- The brand of ranch seasoning matters – I recommend Hidden Valley if you can find it.
