The Perfect Meal Prep Breakfast

One of my favorite on-the-go breakfasts are the Starbucks bacon gruyere egg bites — but they’re too pricey to eat everyday. I’ve perfect this recipe for copycat egg bites at home, and here’s why you’ll love them:

  1. Super quick and easy. Made right in your blender with only five ingredients, this Starbucks copycat recipe is the easiest meal prep breakfast that’s ready in under 30-minutes.
  2. Smooth and pillowy, never rubbery. Just like the Starbucks version, these protein-packed egg bites have a smooth texture that re-heats perfectly.

Key Ingredient Notes

  • Cottage cheese: The secret ingredient in Starbucks’ original recipe for that smooth and perfect texture. It also boosts the overall protein, which is a bonus.
  • Hot sauce: The egg bites aren’t spicy — a dash of hot sauce just adds a touch of acidity and balance. I use Frank’s Red Hot but any brand should work.
  • Gruyere and cheddar: I like an equal blend of both for the best flavor. If you can’t find gruyere, using sharp cheddar on its own is still delicious.

How To Make Bacon Gruyere Egg Bites

Step 1: Blend eggs, cottage cheese, hot sauce, and some of your cheese.

Step 4: Bake, cool, and enjoy!

Storage and Re-Heating

  • Cool to room temperature, then transfer to the fridge in a sealed bag or container.
  • They’ll stay good in the fridge for up to five days. I do not recommend freezing this recipe.
  • My favorite way to heat these is to pop them in the air fryer for 3-5 minutes at 350 F. Or, warm in the oven for 10-15 minutes at 375 F, or in the microwave for 30-45 seconds.

Tips From My Test Kitchen

  1. Use silicone liners, not paper. I tested both, and found paper liners to consistently stick to the egg bites. I highly recommend using silicone muffin liners or a silicone muffin pan.
  2. Let them completely cool before storing. If your egg bites are even a little bit warm, they’ll create condensation in the fridge and lead to a soggy egg bite.
  3. Add extra toppings. You’re welcome to swap the cheese and bacon for other mix-ins, or add a few extra toppings! My favorite additions are sliced chives, diced bell pepper, or finely chopped broccoli. Just be sure to limit any extra toppings to 1/2 cup or less to keep the egg bites in tact and prevent any excess moisture when baking.

Bacon Gruyere Egg Bites

Copycat Starbucks' bacon gruyere egg bites at home! With only 5-ingredients and a blender, you'll have the perfect protein-packed breakfast for meal prep.

Ingredients
 

  • 8 large eggs
  • ยพ cup cottage cheese, I use whole milk but 2% works too
  • ยพ cup shredded gruyere and sharp cheddar (divided), I like a 1:1 ratio of both cheeses
  • ยฝ tsp hot sauce, I use Frank's Red Hot
  • 5 slices cooked bacon, chopped

Instructions
 

  • Position oven rack to the middle and pre-heat to 350 F. Line a muffin pan with silicone liners and set aside.
  • To a blender, add eggs, cottage cheese, ยผ cup shredded cheese, and hot sauce. Blend until completely smooth.
  • Pour into prepared muffin pan, filling each about 3/4 of the way to the top until all the egg mixture is used.
  • Top with bacon and remaining shredded cheese, distributing evenly amongst egg bites. Gently press them down into the egg bites if needed.
  • Transfer to the oven and bake for 18-23 minutes or until egg bites look completely set. They shouldnโ€™t jiggle when you gently shake the pan.
  • Remove from the oven and let cool for 5-minutes in the pan. Remove the egg bites from the pan (but keep them in the silicone liners) and cool on a wire rack. You can eat them warm or wait for them to cool to room temperature.

  • Depending on your hunger, a serving size is 2-3 egg bites.ย
