As a dietitian, I love that they’re made with simple, nourishing ingredients like dates and pecans, with no added sugar in the base. They taste indulgent enough for dessert, but they’re easy to prep ahead for whenever a sweet craving hits.

A Healthy Dessert That Actually Satisfies

These pecan pie energy balls are one of the few healthier desserts that leave me genuinely happy and satisfied, instead of wishing I’d just eaten the real thing! Here’s why you’ll love them:

  • They taste like pecan pie. Dates and pecans create a rich, buttery, caramel-like flavor with a soft and chewy texture.
  • They’re naturally sweet. The base is sweetened entirely with dates, so you get plenty of sweetness without added sugar.
  • They’re ridiculously easy. Just five ingredients in the base, no oven needed, and about 10 minutes of hands-on prep.
  • They’re perfect for sweet cravings. Enjoy one after lunch, with your afternoon coffee, or as a satisfying little dessert after dinner.

Key Ingredient Notes

Ingredients for pecan pie energy bites displayed in small bowls.

Medjool dates: These create the naturally sweet, sticky, caramel-like base. Use soft, fresh dates for the best texture.

Pecans: Give these energy bites their classic buttery pecan pie flavor. Use raw pecans for the softest, smoothest texture.

Cinnamon and vanilla: These simple flavors help recreate that cozy pecan pie taste.

Chocolate chips: I use semi-sweet chocolate for a delicious contrast to the sweet filling. You can use sugar-free chocolate to avoid added sugar, or leave the chocolate off entirely.

Coconut oil: Helps thin the melted chocolate so it’s easier to dip or drizzle.

Flaky sea salt: A little sprinkle on top balances the sweetness and makes these taste extra special.

Tips From My Test Kitchen

Use soft dates. This is key for a smooth and chewy dough.

Don’t stop blending too early. You want a thick, smooth, caramel-like dough without big chunks of dates or pecans. Keep processing until the mixture is soft, sticky, and holds together easily.

Don’t burn your chocolate. Melt it in short intervals and stir frequently to avoid overheating.

Don’t skip the flaky salt. That little bit of salt on top balances the sweetness beautifully and makes these taste even more like a decadent dessert.

Storage and Freezing

Store your pecan pie energy bites in an airtight container in the fridge for up to 1 week. They’re delicious straight from the fridge and make an easy grab-and-go sweet treat.

You can also freeze them! Transfer the bites to a freezer-safe container and freeze for up to 3 months for best quality. Let them thaw in the fridge before enjoying.

Common Questions

Do pecan pie energy bites have added sugar?

The energy bite base is naturally sweetened with Medjool dates and contains no added sugar. Regular chocolate chips do contain added sugar, but you can use sugar-free chocolate or skip the coating entirely if you prefer.

Can I make these energy balls without chocolate?

Absolutely! I’ve tested them without chocolate and they’re still delicious. You can also drizzle a little melted chocolate over the top instead of dipping for a lighter coating.

Why aren’t my energy bites sticking together?

Your dates may be too dry, or the mixture may need more time in the food processor. Try blending a little longer until the mixture becomes sticky and holds together when pressed.

Can I use a blender instead of a food processor?

A food processor works best for this thick, sticky dough.

Instructions

  • Make dough: Add dates, pecans, cinnamon, salt, and vanilla to a food processor. Blend for 2-3 minutes, pulsing often, or until you have a clumpy and sticky dough. You’ll know it’s ready when it holds together easily when pressed in your hands. Transfer to a bowl for easier scooping in your next step.
  • Prepare balls: Line a plate with parchment paper. Use a 1 ½ Tbsp cookie scoop to grab dough, and gently roll it into a ball between your hands. Transfer to the parchment paper, and repeat until you have roughly 10 balls and all the dough is used up.
  • Melt chocolate chips: Add chocolate and coconut oil to a microwave-safe bowl. Melt in the microwave in 15-second intervals, stirring in between, until the chocolate is melted and fluid.
  • Dip and chill balls: Immediately drizzle the balls with melted chocolate, or dip into the chocolate so half is covered. Return to the parchment paper, and repeat for all balls. Sprinkle chocolate with flakey salt (and if desired, crushed pecans), and transfer to the fridge. Chill for 30-minutes, or until the chocolate is matte and set.
  • Store: Keep your pecan pie energy balls in the fridge in a sealed container. Enjoy for up to 1 week!

Notes

  • Keep these totally free of added sugar by using sugar-free chocolate chips!
