  • Monterey jack: Any shredded cheese works, including cheddar, gouda, and mozzarella.
  • Roasted red peppers: Opt for roasted red peppers already prepared in a jar. Just make sure to pat them dry before dicing — any excess moisture can lead to soggy egg bites that don’t set.
  • Corn starch: This is super important to get the right texture, so don’t skip it.
  • Hot sauce: The egg bites aren’t spicy, this just adds a little acidity and tang. I prefer Frank’s red hot.

How To Make Egg White Bites

Step 1: Blend egg whites, cottage cheese, shredded cheese, salt, hot sauce, and corn starch until smooth.

Step 4: Bake for 25-30 minutes at 350 F, or until puffy and set.

How To Store And Re-Heat

Let your egg bites cool completely to room temperature, then transfer to a sealed food container or bag.

Keep them refrigerated for up to four days. My favorite way to re-heat them is in the air fryer for 3-4 minutes at 350 F, or until heated through. You can also microwave for 30-45 seconds.

More Mix-Ins

Feel free to add more mix-ins to make these egg bites your own! Here are some ideas:

  • Veggies: add diced bell pepper, fresh jalapeno, baby spinach (maximum 1/4 cup chopped), broccoli, zucchini, or cauliflower.
  • Cheese: swap Monterey jack for cheddar, gouda, or mozzarella, or add a sprinkle of feta or goat’s cheese to the egg cups in addition.
  • Meat: add cooked ground sausage, diced bacon, or diced turkey bacon.

Don’t add more than 1/2 cup total of your mix-ins, or your egg bites won’t set. Be especially cautious adding extra vegetables, since they will release extra moisture in cooking. And be sure to chop everything nice and small!

Important Tips

Limit your mix-ins! You’re welcome to add more veggies or other mix-ins, but don’t exceed 1/2 cup total. More mix-ins means more moisture, which can lead to soggy egg bites that don’t properly set.

Also, don’t skip the corn starch. It makes a big difference to the final texture.

Copycat Starbucks Egg White Bites

Prep breakfast for the whole week with these easy Starbucks egg white bites! They're a high-protein, savory breakfast that re-heats perfectly — and they couldn't be easier to make.

Ingredients 

  • 2 cups egg whites
  • 1 cup cottage cheese, I use 2%
  • 1 cup shredded monterey jack cheese
  • ¼ tsp salt
  • 1 ½ Tbsp corn starch
  • ½ Tbsp hot sauce, I use Frank's red hot
  • ¼ cup small diced roasted red peppers, patted dry
  • 3 green onions, sliced thin

Instructions 

  • Position oven rack to the middle and pre-heat to 350 F. Prepare a muffin pan with liners and set aside.
  • Add egg whites, cottage cheese, shredded cheese, salt, corn starch, and hot sauce to your blender. Blend until smooth.
  • Pour into lined muffin pan, filling each almost to the top.
  • Top each egg bite with roasted peppers and green onion. Gently press the toppings down into the egg bites, and stir them with a fork to incorporate throughout.
  • Bake for 25-30 minutes or until the egg bites look puffy and set. Leave them to cool in pan until they reach room temperature. You'll notice they'll deflate and get smaller — that's normal! Enjoy them warm, or wait for them to cool before storing.

Notes

  • Make sure to use a silicone muffin pan or silicone liners because the egg white bites will stick to metal or paper.
  • Feel free to add more mix-ins to your egg white bites, but limit to 1/2 cup or less. If you use too many mix-ins, you may end up with soggy egg bites.
