Key Ingredients And Swaps

Ingredients for chicken sausage sheet pan dinner in bowls on a marble counter top.
  • Chicken sausage: Look for pre-cooked chicken sausage, usually found near the hot dogs. You can choose any flavor you love, or swap for plant-based sausage if needed.
  • Sweet potatoes: Roasted sweet potatoes pair perfectly with the creamy honey mustard sauce, but you can swap in baby potatoes, yukon gold, or white potatoes.
  • Brussels sprouts: You can swap for any vegetable you like โ€“ broccoli, cauliflower, or bell pepper would all work great.
  • Plain greek yogurt: This makes the base of the creamy honey mustard sauce. I like Greek yogurt for the protein, but you could use plain yogurt or balkan yogurt too.

Variations

  • Make it vegetarian by using plant-based sausage.
  • Make it dairy-free by swapping my yogurt honey mustard for any prepared honey mustard sauce that’s dairy-free.
  • Switch the brussels sprouts for broccoli, cauliflower, bell pepper, or butternut squash.
  • Swap sweet potatoes for yukon gold, white potatoes, or baby red potatoes.
  • Make it spicy by adding a pinch of cayenne pepper to the veggies before baking.
  • Thin the sauce with a splash of water to turn the honey mustard dipping sauce into a drizzle instead.

How to Store Leftovers

Let everything cool to room temperature before transferring to food containers. Store honey mustard sauce separately. Your chicken sausage sheet pan dinner will stay good in the fridge for up to four days.

Tips From The Test Kitchen

  1. Don’t skip the parchment paper. Parchment works much better than aluminum foil to prevent sticking.
  2. Cook the veggies before adding chicken sausage. I recently re-tested this recipe and found that adding the chicken sausage later in baking helps the veggies properly roast, without over-cooking the sausage. Follow this method if you can!
  3. Cook until thoroughly browned. Things get 1000x more delicious when the vegetables fully roast and the chicken sausage browns on the edges. If your sheet pan is looking pale, put it back in the oven to keep cooking!

Equipment

Instructions

  • Position your oven rack to the middle and pre-heat to 400 F. Line your sheet pan with parchment paper and set aside.
  • To a large mixing bowl, add sweet potato, brussels sprouts, olive oil, and seasonings. Toss until everything is evenly coated.
  • Transfer to the lined sheet pan. Bake for 15-minutes.
  • Remove the tray from the oven, and mix in sliced chicken sausage.
  • Return to the oven and bake for another 20-30 minutes, or until vegetables are browned and cooked though.
  • While that's cooking, assemble your yogurt honey mustard sauce. Add all ingredients to a small bowl and mix until smooth and combined. Taste, and adjust salt as desired (I like a full ยผ teaspoon). If you want to use this as a drizzle instead of a dip, slowly stir in a few teaspoons of water. Set aside.
  • Transfer the veggies and chicken sausage to bowls. Add a generous spoonful of yogurt honey mustard sauce, and enjoy immediately!
