  • Chicken thighs: I like to use boneless, skinless chicken thighs because they pack maximum flavor with very little effort. You can swap for chicken breast if preferred, but they may not be quite as moist and satisfying. Whatever you use, make sure the bone and skin has been removed.
  • Soy sauce: I prefer the flavor of regular soy sauce, but you can use low sodium if preferred. Use tamari for a gluten-free swap.
  • Sriracha: We use a hint of sriracha for balance, but the sauce is not overly spicy. You can leave this out if you’re feeding littles or picky eaters.

Ingredients
 

  • 2-2 ½ lbs skinless boneless chicken thighs
  • ½ cup honey
  • ½ cup soy sauce, use low sodium if desired
  • 1 ½ Tbsp sriracha
  • 1 Tbsp apple cider vinegar
  • 5 cloves garlic, minced
  • black pepper, to taste
  • 2 Tbsp corn starch
  • 2 Tbsp cold water

  • To your slow cooker, add chicken, honey, soy sauce, sriracha, vinegar, garlic, and black pepper. Stir to combine and coat the chicken.
  • Put the lid on the slow cooker and cook on high for roughly 3 – 3 ½ hours, or until chicken can easily pull apart with a fork.
  • Remove chicken from your slow cooker, and transfer to a large bowl or cutting board. Meanwhile, whisk corn starch and water together in a small bowl until dissolved and completely clump-free. Pour into slow cooker and stir with the sauce.
  • Gently break up the chicken with a fork, and stir back into the slow cooker. You’re aiming for bite-sized pieces of chicken with some chunks, not fully shredded chicken. Close the lid and cook for another 30 minutes on high, or until the sauce has thickened.
  • Serve over rice with veggies of choice. Top with sesame seeds, sliced green onions, and other condiments as desired. Enjoy!
