  • Beans: This recipe uses black beans and black eyed peas for double the fiber and protein, but you can swap either for any canned bean you like. Chickpeas, kidney beans, and lentils all work great.
  • Veggies: Roma tomatoes, bell pepper, white onion, and jalapeño make up the base, but feel free to add or swap based on what you have. Diced cucumber and red onion are great additions too.
  • Jalapeños: Remove the seeds for mild heat or keep them in if you like things spicy.
  • Avocado: Optional but highly recommended for extra creaminess and healthy fat. Add this right before eating if you’re planning to eat your cowboy caviar throughout the week — otherwise, the avocado can brown.

How To Make Healthy Cowboy Caviar

Step 2: Add remaining salad ingredients to the bowl and toss until all ingredients are coated in dressing.

Storage instructions

This healthy cowboy caviar will stay good in the fridge for up to three days – stir before eating because the juices will fall to the bottom. You can store in single-serve containers or a covered mixing bowl.

Tips From My Test Kitchen

  1. Stir before serving. The dressing and tomato juices sink to the bottom of the bowl over time, and that’s where a lot of the flavor lives. A good stir before serving makes a big difference.
  2. Add the avocado right before eating. If you’re making this for meal prep, leave the avocado out and add it fresh right before serving so it doesn’t brown.
  3. Keep the jalapeño seeds for extra heat. Removing the seeds keeps this mild and crowd-friendly. Leave them in if you want more of a kick.
  4. Make it your own. Swap the beans, add extra veggies, or change up how you serve it. See the customization section below for ideas!

How to Serve

  • As a dip: This recipe is designed to be served as a delicious and high-fiber dip with tortilla chips. You could use veggies like carrot chips or sliced cucumber to dip too.
  • As a topping: Spoon it over tacos, quesadillas, stuffed peppers, nacho salad or taco cups for extra flavor and fiber.
  • As a side dish: Serve alongside taco seasoned ground beef and half an avocado for a quick, balanced weeknight dinner. I love using the Siete brand taco seasoning!

What is cowboy caviar?

Cowboy caviar is a popular dip or salad made with beans, corn, fresh vegetables, and a zesty lime dressing. Despite the name, there’s no actual caviar involved! It’s typically served with tortilla chips as a dip, or used as a topping for tacos and bowls.

Can I make cowboy caviar ahead of time?

Absolutely! It actually gets better as it sits and the flavors meld together. Just leave out the avocado and add it fresh right before serving (otherwise, it will brown).

Can I use dried beans instead of canned?

You can, but canned beans are much faster and more convenient here. If using dried beans, make sure they’re fully cooked and cooled before adding them to the recipe. You might also need to add a pinch more salt, since canned beans contain sodium.

Ingredients 

Salad:

  • 1 can black beans, drained and rinsed
  • 1 can black eyed peas, drained and rinsed
  • 3 ripe roma tomatoes, diced small
  • 1 red or orange bell pepper, diced small
  • 1/2 large white onion (or 1 small), diced small
  • 2 fresh jalapeños (seeds removed), diced small
  • 2 large avocados, diced small (optional)
  • handful cilantro, chopped

Dressing:

  • 1/4 cup olive oil
  • 1 lime, juiced
  • 2 tbsp red wine vinegar
  • 1 clove garlic, minced
  • 1 1/2 tsp salt

Instructions 

  • To the bottom of your large mixing bowl, add all ingredients for the dressing. Whisk until smooth.
  • Add remaining salad ingredients to the bowl. If you’re serving this for meal prep, omit the avocado or add right before eating (it will brown). Toss until all ingredients are coated in dressing.
  • Serve with tortilla chips and enjoy!
