That’s why I love this simple and delicious recipe for cottage cheese egg bake frittata.

Inspired by the flavors of my beloved Starbucks bacon and gruyere egg bites, but with a healthy dietitian twist to boost protein and decrease calories. And it’s got the same soft and incredible texture of the Starbucks version.

You will love this nutritious and delicious recipe for a meal prep breakfast or lunch. You only need a handful of easy-to-find ingredients to make it.

Nope! This high protein egg bake doesn’t taste like cottage cheese at all.

And because it’s blended, the texture is completely smooth. If you like the texture of Starbucks’ sous vide egg bites, you’ll absolutely love this high protein, homemade version.

Ingredient notes and swaps

Here’s what you’ll need to make this high protein, cottage cheese egg bake.

  • Cooking spray: You’ll need to grease your baking pan to prevent and minimize sticking. You can grease your pan with butter or olive oil if preferred.
  • Large eggs: We use whole eggs so you get all the benefits from their protein, fat, and micronutrients.
  • Cottage cheese: I use 2% cottage cheese because it has lots of protein and a good mouthfeel from the fat. You can use another fat percentage if you prefer.
  • Salt, pepper, and cayenne pepper: This cottage cheese frittata isn’t spicy! The cayenne pepper is optional, but it’s really not overpowering.
  • Sharp cheddar cheese: I recommend using a strong and flavorful cheddar cheese for this recipe since it’s easy to find. If you want to replicate Starbucks’ flavors better, use gruyere instead.
  • Cooked turkey bacon: Use any brand of turkey or chicken bacon you love. I recommend cooking this until crisp before chopping it for the best texture in your egg bake. If you’d prefer to use regular, pork bacon, that works too.
  • Green onions: For the perfect splash of green and extra burst of flavor. Feel free to use chives instead if you like those better. If you don’t have either, leave them out.

How to make a cottage cheese egg bake

Position oven rack to the middle and pre-heat to 350 F.

Spray a 9×13-inch non-stick baking dish with cooking spray and set aside.

In a large blender, combine eggs, cottage cheese, salt, black pepper, and cayenne pepper. Blend on high until completely smooth, about 20-seconds.

Pour the egg mixture into your prepared baking dish.

Sprinkle cheese, turkey bacon, and green onions over top. Then, carefully transfer to the oven — go slow because the toppings can easily shift.

Bake for 20-25 minutes or until the eggs are set and lightly golden brown at the edges. Let your egg bake rest for 10-minutes before serving.

Meal prep: Store in single-serving food containers or sealed freezer-safe bags.

Fridge: Store your cottage cheese egg bake in the fridge for up to four days.

Freezer: Store in the freezer for up to three months.

How to re-heat

If possible, I recommend re-heating your cottage cheese egg bake in an air fryer or toaster oven for 2-3 minutes or until heated through. Set the temperature to 350 F.

You can also re-heat in the microwave for 30-45 seconds or until heated through.

Top tips

  • Blend your egg mixture long enough to remove all chunks in your cottage cheese.
  • Bake immediately after adding your toppings to prevent them from falling to the bottom.
  • Use a good non-stick pan and/or generously spray to prevent sticking.
  • If your cottage cheese egg bake sticks to the pan, don’t worry! Let it rest for 10-minutes and then use a flexible spatula to get underneath your slice and scoop it out.

Only have a small blender?

No problem! Blend your cottage cheese in a small hand-held blender with 1-2 eggs and then whisk with remaining eggs.
