We all know protein is important for staying full, maintaining a healthy weight, and generally just feeling good. But do you know what nutrient is just as important but so often overlooked? FIBER!

Fiber is key for digestion, fullness, heart health, and so much more. As a Registered Dietitian, it’s a nutrient I wish we were all eating more of.

That’s why I love this simple recipe for an english muffin with avocado. With just 3-ingredients and some optional seasonings, you’ll get over a third of your daily fiber and a whole lot of satisfaction.

What’s in this snack

To make my high-fiber version of an english muffin with avocado, here’s what you’ll need:

  • Whole wheat english muffin — I like whole wheat instead of white for extra fiber and protein
  • Avocado —half an avocado has over 4 grams of dietary fiber and lots of healthy fats
  • Hemp hearts — these nutty nutritional sprinkles have healthy fats and fiber
  • Seasonings — you can season these english muffins however you like, but I enjoy them with salt, lemon juice, and red pepper flakes

Where does the fiber come from?

The fiber comes from every ingredient in this nourishing snack!

Whole wheat english muffins can offer 3-5 grams of dietary fiber, depending on the brand. When you top that with half an avocado and 1.5 tablespoons of hemp hearts, you’re getting an additional 4 grams.

Nope! You can choose any english muffin you prefer. If you’re looking for a high-fiber snack, I’d recommend choosing an english muffin with at least 2 grams of dietary fiber.

Can I use more avocado?

Absolutely! Avocado is rich in heart-healthy fats and fiber, so feel free to use the whole thing. If you have weight loss goals, keep in mind that avocado is calorie-dense.

How can I add protein to this snack?

I’d recommend adding a big scoop of cottage cheese, a few boiled eggs, and/or a spinkle of goat’s cheese for more protein.

Ingredients
 

  • 1 whole wheat english muffin
  • 1/2 medium avocado
  • 1 1/2 Tbsp hemp hearts

Optional seasonings

  • pinch salt
  • pinch red pepper flakes
  • squeeze lemon juice

Instructions
 

  • Open your english muffin. If desired, toast it.
  • Using the back of a fork, mash avocado evenly on the two halves of your english muffin.
  • Top with hemp hearts and seasonings of choice. Enjoy immediately!
