Here’s what you’ll need to make turkey and cheese pinwheels:
- Large wrap — a large whole wheat tortilla works great, or sub for any high fiber wrap you like
- Laughing cow cheese — sub for cream cheese if needed
- Elote seasoning — I got this from Trader Joe’s, but feel free to swap with any seasonings you like
- Crispy onions — you can usually find this with burger toppings or salad toppers
- Sharp cheddar — the recipe calls for finely shredded, but you can use slices too
- Deli turkey — our main protein source! Look for nitrate-free if you can
- Baby spinach — for micronutrients
Step-by-step instructions
Place tortilla on a cutting board.
Spread laughing cow cheese evenly over the tortilla.
Add elote seasoning and crumbled crispy onions, reaching the edges.
Sprinkle with an even layer of cheese.
Layer turkey slices gently over the cheese, reaching the edges.
Add spinach.
Tightly roll your tortilla, then slice into pinwheels. Serve and enjoy!

How to store

- handful baby spinach
